So what's the deal with the output on this? Two 4ohm options seems so weird. Is this something that I can plug my 16ohm cab into and it won't mess anything up, I'll just loose some power or something? I like the idea of a mesa head bc they're local to me so repairs and stuff is real easy, plus this thing sounds up my alley.

rewire your cab to match the head if possible otherwise your shit outta luck. you'll basically be putting the output transformer into cardiac arrest.

That much mismatch on a SS amp..yea, you'll kill it.
It's how many have died.
Rewire or get a converter box (like an attenuator that will put out whatever ohmage you want, set it at zero soak or next to zero, profit).

That is a dope pedal and really nails what I'm looking for, but I've had trouble with the switches on them and unfortunately this is for live use where that issue can be a real problem.

This is lifted directly from this amplifier's manual, freely available:
SPEAKER JACKS One 8-ohm and two 4-ohm speaker jacks are provided on the 50 Plus. Use the
8-ohm jack for maximum power and clarity with the enclosed 12" speaker (if combo version) or when
using a single MESA one-twelve or four-twelve cabinet. Use the 4-ohm jack(s) when using two 8-ohm
speakers or two 8-ohm cabinets, or when using a single MESA two-twelve cabinet (as these are
4-ohm cabs).
To elaborate on waltdogg's response: If your 16 ohm cab is a 4x or 2x speakers it can be turned into 4 ohms and just run off one of the 4 ohm holes. If it's a single speaker, you'd want to grab another 16 ohm and daisy chain it off the 8 ohm output jack.
Impedance mismatch with transformer coupled tube amplifiers is worse when the speaker load is lighter (impedance is a larger number), if you are in a desert island situation and absolutely have to mismatch - it is better to provide a higher load (like 4 ohms on an 8 ohm leg) than the other way around, you'll burn through tubes quicker but they are user replaceable whereas output transformers are not. Different amps have different tolerances, my sense of Mesa is that they have no fucking tolerance for such high jinks.
Naturally, non transformer coupled solid state is typically opposite in behaviour.
