So; maybe I do or do not want this guitar, but the OG owner turned this guitar into a two knob job; which leaves an extra hole in the pick gaurd; and me wondering,....what could I do to the electronics to make this guitar cool?
The simplest idea that comes to my mind would be a killswitch, but if you had the chance; what would you do?

I'd have him put the knob back on and in the circuit.
And knock $50 off the price - they're great guitars but he's asking a bit much for one that's got pickguard scratches and god knows what happening under the hood.
$200 is minty perfect dealer price for a used one IMO.
Chances are it's cool on its own (and as much as I love the killswitch idea, I've had a guitar with one for years now. I've used it I think twice for anything other than swearing and wondering "why doesn't this thing work")

Lawls; I ended up spending some cash on a Red Label Yamaha FG-75 (1972, Made in Taiwan).
