oh I like cheese alot,
I am far less meat-centric than I used to be, my breakfast is always vegan (not to be vegan but it is) I make my own oatmeal mix with nuts and dried fruits and seeds, brought a gallon bag with me to CN
I think it's the cost and the need to replace alot of foods I like that would make it hard.

It just depends… I was never a big meat person, I do every now and then miss fish but it's been over 15 years.. The thing with the fake meat shit is after about the third time you eat whatever it is all you can taste is whatever tastes weird, odd or off-putting

yeah I had some steamed tofu yesterday that was just brutal, and it took about 3 seconds to find the odd taste that I didn't like
The idea of going vegan and then eating a bunch of stuff that reminds me of meat wouldn't work anyway.

Yeah I try to avoid most of the fake meats. I can make my own with magic vegan kitchen science which is fun but usually I'm too lazy to do it. But sometimes I'll spend half a day making seitan and sausages and stuff to use throughout the week.
If you're just buying fake meats its super expensive.
It's actually really easy to be vegan on the cheap. I can make rice and beans like a dozen different ways. The secret is acquiring a badass spice rack.
Steamed tofu sounds terrible. See that's why people don't like it. Would you eat steamed beef? Or steamed chicken? You gotta grill that shit up with a goddamn sriracha BBQ glaze. Blackened over some hearty greens. Pan fried in olive oil with garlic and onion and black pepper. Or my favorite: curried scrambled tofu burritos.

this was a giant clay pot with 4 inch chunks of really moist tofu like eating bad flan
I didn't think of beans and rice, you could go cheap with that and last quite a while.
I have had a few fried tofu and mung bean noodle dishes that are just insanely good,

I'd be surprised if you can't find a decent marinara pizza in NY
And about tofu : there are so many types and so many ways to eat them. When I lived in Europe, I just bought the one type that was available in chinese groceries. Ok but not awesome. Here in Japan I'm still sometimes amazed by the texture and even taste of some tofu. Sadly, because it's fresh stuff most of the great ones are not easily available in countries where people do not traditionally eat tofu.

So yeah, you can have awesome steamed tofu .
Tofu is not hard to make.. I have a soy milk machine that makes meh soy milk but with it you can make good tofu

Well, it depends on which kind of tofu I guess . As I said, there is a huge variety of tofu, from super soft to harder to a bit mochi-like, there's yuba (sort of the tofu skin), fried tofu, etc. Some tofu is prepared with other stuff in it too. I still eat types I never tried before in restaurants once in a while.
Making tofu at home is cool, you can probably experiment a bit and get cool stuff
