If I was to mount external pots for these what would you suggest?

20k-25k linear for the bias. it will go from thinner/smoother > thicker/raspier. you could use a 50k if that's all you have, but i wouldn't go bigger than that as your range will most likely start to get bunched up at one end of the pot.
personally, i wouldn't go for an external pot for the feedback trim - you won't get too much use from it. i've actually taken it out of the newest TAFM pcb and use a 10k fixed resistor instead. bias will stay, though, as it helps dial in the right sound.
